2 lb Meat (Chicken, Goat, or Lamb)
2 medium onions (chopped)
2 tbsp ginger (minced)
3 cloves garlic (minced)
2 medium plum/Roma tomatoes
1 long green chili or fresh jalapeno
1 and 1/2 tsp red chili powder*
1 and 1/2 tsp salt*
3/4 tsp turmeric*
1 tsp ground coriander*
1 tsp ground cumin seeds*
1/2 tsp Garam Masala*
1/8 tsp Carom seeds*
1/2 lemon juice
1/4 cup olive or canola oil
Add oil and onions to the pot and cook until onions are golden color on a heat setting that is between high and medium (should be about 4-5 minutes).
Add meat and garlic and cook on medium heat for another 4-5 minutes.
Add tomatoes, ginger, green chili, lemon juice, and all the spices. Mix well so all of the meat is coated with the masala/spice mixture.
Cover the pot with a lid and cook on a heat setting between medium and low for about 45 minutes. Cook until meat is tender and oil layer has risen.
